One of our favorite days of the year is Mother’s Day. Celebrating mom and all the other strong women who have an impact on our lives feels like one of the best reasons to raise a glass. And while it usually involves a home-cooked meal, a spa day or a brunch date, this year it’s a little different, but that doesn’t mean it can’t be special.  

 

To celebrate our own mamas at Johnny Was, we’ve been looking back on some of our best times together (don’t we all look cute?). We also reached out to one of our favorite chefs, Margarita Kallas Lee, for her favorite perfect-for-mom recipe that’s easy to whip up and box up. 

 

We met Margarita a few years ago when she modeled for Johnny Was, but she now spends her days (and nights) churning out amazing pastries and desserts at Scratch Bar with her husband, Phillip Frankland Lee, as well as Sushi Bar, which is one of our favorite spots in Montecito, CA. “I was making these for our restaurant menu to be used for an ice cream sandwich, so if you have any in the freezer, try adding that as well,” says Margarita. Sounds like a sweet plan.

 

Best Ever Chocolate Chip Cookie

 

Ingredients:

 

4oz sugar

4oz brown sugar

8oz butter (room temperature) 

1 ½ cups chopped chocolate chips 

1/4t salt

8oz all-purpose flour

1t baking powder 

1 egg

Dash of vanilla extract 

Pinches of cinnamon, nutmeg, cardamom, clove 

 

How To:

 

Preheat oven to 350. 

In a mixer with a paddle attachment cream together butter, sugar, brown sugar, vanilla, salt, spices. 

Once that’s evenly mixed add the egg. 

Mix. 

Then add the flour with the baking powder. 

And finally add chocolate. 

 

Once that’s done mixing altogether portion the cookies into a roughly 1oz portion, or about 1 tablespoon. Place the portioned cookie dough onto a baking tray, lined with parchment paper and sprayed with non-stick spray. Then put that tray into a fridge for about an hour, then bake at 350F 5-7min, rotate and bake for another 5-7min (depending on your oven). The edges of your cookies should be dark brown when they’re ready to be taken out of the oven.
